Big Sur’s Nepenthe Restaurant Bean Salad Recipe
Let me first say, I am not typically a bean fan. It’s the texture. However, one bite of Nepenthe’s Bean Salad and I was hooked! At first I couldn’t figure out what it was that was so appealing to me and then it clicked….tarragon. Tarragon is not a spice that I ever use or was even that familiar with but it adds a complexity and flavor to the beans that is unique and that I find irresistible. This bean salad would be great as a side dish at a barbecue or paired with a burger or sandwich!
